10 Mouthwatering Camping Meals Perfect for Van Life

Cooking in a van looks intimidating until you actually do it. I have been living and traveling in campervans for years, and a tiny kitchen is not a barrier to a real dinner. It just changes how you plan.

Every meal on this list works on a single burner or a double burner stove, indoors or outside. In our old Chevy Astro we cooked on a single burner stove inside the van whenever we were parked in a city, and we set that same stove on a tiny table outside at campgrounds or while boondocking.

Our newer Sprinter is a little fancier. It has an induction cooktop inside and a two burner stove we use outdoors when the weather cooperates.

Some of these ideas are my own favorites from years on the road. Others come from other van lifers on Reddit who were happy to share what actually works in a small space.

None of them need a full kitchen, a big oven, or a long ingredient list. Most come together in one pan, and a few can be made from food that does not even need refrigeration.

If you can boil water and stir, you can cook in a van. The real trick is choosing meals that fit the gear you already own.

My Top Van Cooking Gadgets

Before the meals, here is the short list of tools I reach for almost every day. Nothing here is expensive, but each piece earns the space it takes up.

  • A pressure cooker
  • A cast iron skillet
  • A large cutting board
  • Insulated plates
  • A good Santoku knife

If you only buy one thing, make it the cast iron skillet. It handles gnocchi, potatoes, frittatas, and fried rice without complaint.

Crispy Gnocchi

Dried gnocchi goes straight into a hot cast iron skillet, and you do not boil it first. While the potato noodles crisp, add diced red onion and garlic, plus red pepper flakes if you want heat.

Once the gnocchi reaches the crispness you like, stir in tomato sauce. I use Arrabiata sauce from Whole Foods because it brings its own gentle spice. Finish the pan with fresh ground pepper and parmesan, then serve arugula on the side dressed with balsamic vinegar.

One lesson from my own van: add the garlic a minute after the onion, not at the same time. I learned that the hard way while watching a sunset in Utah.

Wraps

Wraps are the most flexible thing in my rotation, and they work at any hour. Fillings can include chicken or chickpea shawarma, hummus, feta, and greens. My usual version sautes a can of chickpeas with Mediterranean spices, onion, and garlic as the protein, and it holds up beautifully without any meat.

I prefer Lavash bread over tortillas. It crisps better and gives you a larger wrap, which matters when you are hungry after a long drive. You can also build them open faced and pile arugula on top, then add a spicy red sauce. Korean red chili paste is my favorite for that.

They also use very little fuel, which matters when you are trying to make a propane canister last the week.

Chili

Chili is the best batch cooking and reheating meal in a van, especially on cold nights. Ours is vegetarian, though you can add ground beef if you eat meat. Start by sauteing onion and garlic.

Add a 32 ounce can of whole tomatoes and let it simmer for a few minutes. Then add a couple of cans of beans, a can of corn, chili powder, cumin, and salt. Pressure cook it for 5 minutes and you are done.

Serve it with tortilla, avocado, shredded cheddar, diced cilantro, and sour cream. I usually make enough for two dinners, which means one less night of cooking after a long drive. Reheated chili tastes even better the next day, and it warms up the van while it heats.

Potato and Soy Chorizo Burritos

Dice your potatoes and cook them in a skillet for a few minutes. Add soy chorizo, or meat chorizo if you prefer, to the other side of the pan. Let both cook until they develop an edge, then stir them together into a filling.

Spoon it into a flour tortilla and top with red salsa, avocado, cheese, and sour cream. Refried beans on the side make it heartier, and they are easy to keep in the van pantry.

This one is a favorite after a hiking day. The crispy edges on the potatoes are the whole point, so give them a little extra time if you can.

Mediterranean Mezze

When it is too hot to turn on a burner, this is lunch. It needs no refrigeration and no cooking at all. Arrange whole wheat pitas, sliced avocado, dolmas, hummus, olives, tomatoes, and jalapeños on a plate or a big cutting board.

I look for canned dolmas at Trader Joe’s, and their canned seasoned eggplant is a great addition to the spread. Everything travels well, which makes this a solid choice for a travel day when you are not sure where you will stop.

Stir fried Ramen Noodles

We make this often, usually with three ramen packets for two people. Saute your vegetables first. I like onion, garlic, carrots, broccoli, and red bell peppers, but any combination works.

When the vegetables are about halfway cooked, add the ramen packets with a little water and flip the noodles until they are cooked all over. Add the seasoning packets and stir everything together.

For protein, push the noodles aside to make a hole in the pan and scramble three to five eggs right there. It takes a minute and turns a packet meal into something satisfying.

This is also the meal I make when the pantry is nearly empty and we have not found a grocery store yet.

The Versatile Frittata

Eggs are a van lifer staple, and a frittata is the easiest way to use them. Saute whatever vegetables you have on hand, pour beaten eggs over the top, and cook until the eggs set. It works for breakfast, lunch, or dinner, and it is forgiving if you are working with a single burner and a slightly warped pan.

Leftover potatoes, peppers, or greens from earlier in the week all belong in here. Nothing goes to waste.

Curry in a Hurry

Premade curry packets or jars make a real curry possible on a weeknight in a van. Trader Joe’s has several good options. Simmer the curry with whatever vegetables you have plus tofu or chicken, then serve it over quick cooking rice or with naan bread on the side.

It is one of the fastest dinners we make when we roll into camp late and nobody wants to chop much. The rice takes almost no attention, so you can set up the van while it cooks.

The "Kitchen Sink" Fried Rice

This is the meal that keeps our food waste down. Toss your leftovers into a pan with day old rice, soy sauce, and sriracha. Anything goes, which is exactly the point.

Half an onion, a lonely pepper, the last of the broccoli, a few eggs, all of it works. It tastes different every time and it costs almost nothing.

Campfire Baked Potatoes

If you have a campfire, you have dinner. Wrap potatoes in foil and tuck them down into the coals to cook. When they are done, split them open and top with canned chili, cheese, or whatever else you like.

I keep a can of chili in the van just for this. It is a cozy, customizable meal, and cleanup is basically a fork and a foil ball.

The No Cook Powerhouse: Peanut Miso Chickpea Salad

Some nights cooking is simply too much effort. On those nights I make this salad. Canned chickpeas are the protein base, and a peanut miso dressing brings everything together. Toss in crunchy vegetables for texture and you have a filling meal with zero heat required.

It also works as a side dish next to a wrap or a frittata, and it holds up in a cooler for a day or two. That makes it a smart one to mix up in the morning before a long drive.

I Hope You Enjoy Cooking in Your Campervan!

Van cooking rewards flexibility. You adapt and you improvise, and after a few weeks you stop thinking about what you are missing.

A few things make a real difference. Keep a well stocked spice kit, because spices turn basic ingredients into something you actually want to eat. Invest in quality gear you will use for everything, like a cast iron skillet and a good knife.

Get your food storage sorted too. A small cooler or a 12V fridge expands what you can cook and how long you can stay out.

Shop at local markets and farm stands when you can. Fresh seasonal produce will inspire new meals, it supports local businesses, and it helps you feel connected to the places you pass through.

If you try one of these meals in your own van, leave a comment and tell me how it went. I always pick up new ideas from other van dwellers.
