1-Start by preheating the air fryer to 370Β°F (188Β°C) to get that perfect cooking temperature. Then, thoroughly pat the drained pickle coins dry using a clean kitchen towel or paper towels to remove excess brine this helps the breading stick and prevents sogginess.

2-Next, whisk the egg in a small bowl and place the panko breadcrumbs in a separate medium bowl. Dip each pickle coin into the whisked egg, then coat it completely with the panko breadcrumbs, and lay the breaded pickles on a plate or parchment paper for easy handling.

3-Lightly drizzle extra-virgin olive oil over the breaded pickles to enhance crispiness. Arrange them in a single layer in the air fryer basket, making sure they’re not overcrowded, and cook in batches if needed.
