– 1 tsp ground cinnamon

– Β½ cup (113 g) unsalted butter, softened

– ΒΎ cup (160 g) packed light brown sugar

– 1 large egg

– 1 tsp vanilla extract

– 1 cup (120 g) finely chopped tart apple, diced ΒΌ-inch or smaller

– 2 tsp lemon juice

Instructions

1-Preheat oven: Preheat oven to 350 Β°F (175 Β°C). Line two baking sheets with silicone mats or parchment paper.

2-Whisk dry ingredients: Whisk flour, oats, cinnamon, baking soda, and salt together for about 20 seconds; set aside.

3-Cream butter and sugar: In a stand mixer or by hand, cream butter and brown sugar until combined. Beat in the egg and vanilla.

4-Toss apple with lemon juice: Toss the diced apple with lemon juice in a small bowl.

5-Mix ingredients: Add the dry-ingredient mixture to the butter mixture; mix until just combined. Fold in the apple pieces.

6-Scoop dough: Scoop dough with a medium cookie scoop (about 2 Tbsp per cookie) onto the prepared sheets, spaced about 2 inches apart. Lightly flatten each mound.

7-Bake: Bake one sheet at a time for 14-15 minutes, or until the cookies are set.

8-Cool and store: Cool on the sheet for a few minutes, then transfer to a wire rack to cool completely. Store in an airtight container.
