Instructions

1-Toss the diced apple with the brown sugar and cinnamon in a bowl until evenly coated. Set aside to let the flavors meld.

2-In a mixing bowl, beat the butter and brown sugar together until combined, then increase speed and beat until fluffy, about 2 minutes.

3-Add the egg and vanilla; beat until smooth, about 1 minute, to create a creamy base.

4-Lower the speed, add the flour, baking powder, salt, and spices; mix just until incorporated, about 30 seconds, to keep the dough tender.

5-Gently fold the apple mixture into the dough for even distribution without overmixing.

6-Portion the dough into 2-ounce (about 57 g) balls and place them 2 inches apart on the prepared sheets.

7-Bake for 12-15 minutes, until the edges are set and the centers remain soft, achieving that crispy texture.

8-While the cookies are still hot, whisk together the powdered sugar, maple syrup, milk, and salt to form a glaze; thin with a little extra milk if necessary.
