5 ounces fresh baby spinach

2 small apples, cored and thinly sliced

Half of a small red onion, thinly sliced

1/2 cup chopped walnuts, toasted

1/3 cup dried cranberries

3 ounces crumbled goat cheese

1/4 cup extra virgin olive oil

2 tablespoons apple cider vinegar

2 teaspoons honey

1 teaspoon Dijon mustard

1 small garlic clove, peeled and minced

A generous pinch of salt and black pepper

Instructions

1- Wash and dry 5 ounces of fresh baby spinach thoroughly; clean and thinly slice 2 small apples to keep them crisp.

2- In a large bowl, combine the spinach, apple slices, half of a small red onion thinly sliced, 1/2 cup toasted chopped walnuts, 1/3 cup dried cranberries, and half of the 3 ounces crumbled goat cheese.

3- Prepare the dressing by whisking 1/4 cup extra virgin olive oil, 2 tablespoons apple cider vinegar, 2 teaspoons honey, 1 teaspoon Dijon mustard, 1 minced garlic clove, and a pinch of salt and black pepper.

4- Drizzle the dressing over the salad and toss gently to mix well.

5- Serve immediately, garnishing with the remaining goat cheese.
