  • Total Time: 40-45 minutes
  • Yield: 12 donuts

Ingredients

– 1 1/2 cups apple cider

– 2 cups all-purpose flour for structure and leavening

– 1 teaspoon baking soda for leavening

– 3/4 teaspoon baking powder for leavening

– 1 teaspoon ground cinnamon to enhance taste and finish

– 1 teaspoon apple pie spice to enhance taste and finish

– 1/4 teaspoon salt

– 2 tablespoons unsalted butter, melted

– 1 large egg, at room temperature

– 1/2 cup packed light or dark brown sugar

– 1/2 cup granulated sugar

– 1/2 cup milk, at room temperature for moisture and flavor

– 1 teaspoon pure vanilla extract

– 1 cup granulated sugar for topping

– 3/4 teaspoon ground cinnamon for topping

– 3/4 teaspoon apple pie spice for topping

– 6 tablespoons unsalted butter, melted for topping

Instructions

1-First, reduce the apple cider by simmering 1 1/2 cups over low heat until it becomes about 1/2 cup, which takes roughly 20 minutes; cool for 10 minutes.

2-Preheat the oven to 350Β°F (177Β°C) and grease a donut pan.

3-In a large bowl, mix the flour, baking soda, baking powder, cinnamon, apple pie spice, and salt.

4-In another bowl, whisk melted butter, egg, brown sugar, granulated sugar, milk, and vanilla extract. Add the dry ingredients and the reduced apple cider, mixing until the batter is smooth and thick.

5-Fill the donut pan cavities halfway with batter, using a zip-top bag with a cut corner for easy filling.

6-Bake for 10-11 minutes or until the edges and tops are lightly browned. Check doneness by pressing the top. Cool donuts for 2 minutes before removing from the pan. Re-grease the pan and bake the remaining batter.

7-Mix the granulated sugar, cinnamon, and apple pie spice in a bowl for the topping.

8-Dip the cooled donuts in melted butter, then coat generously with the cinnamon sugar mixture.
