1 cup heavy cream
3/4 cup sugar, divided
1 pinch salt
1/4 cup cornstarch
1 whole egg
2 large egg yolks
2 teaspoons vanilla
1 1/3 cups finely crushed graham cracker crumbs (about 10 full sheets)
2 tablespoons granulated sugar
1/3 cup melted butter
2/3 cup caramel sauce (homemade or store-bought)
1 3/4 cups heavy cream
3 1/2 tablespoons sugar
4 to 5 bananas, sliced
Grated bittersweet chocolate (optional)
Instructions
1-Prepare the crust: Mix 1 1/3 cups finely crushed graham cracker crumbs with 2 tablespoons granulated sugar, then stir in 1/3 cup melted butter until moistened.
2-Whip the topping: Beat 1 3/4 cups heavy cream until soft peaks form, add 3 1/2 tablespoons sugar, and whip to stiff peaks. Chill it until needed.
3-Assemble the cups: Divide the crust mixture among 12 small cups and press it down. Add 3 banana slices per cup, pipe on the pastry cream, then add 3 more banana slices.
4-Drizzle 1 tablespoon of the 2/3 cup caramel sauce over each, warm it if needed, then pipe on whipped cream and sprinkle grated bittersweet chocolate if you like.
5-Chill for up to 2 hours and garnish with a banana slice before serving.
