  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

– 1 tablespoon smoked paprika (for BBQ seasoning)

– 1/2 tablespoon brown sugar (for BBQ seasoning)

– 1 teaspoon garlic powder (for BBQ seasoning)

– 1 teaspoon dried minced onion (for BBQ seasoning)

– 1/2 teaspoon chili powder (for BBQ seasoning)

– 1/2 teaspoon cumin (for BBQ seasoning)

– 1/2 teaspoon salt (for BBQ seasoning)

– 1/4 teaspoon pepper (for BBQ seasoning)

– or 3 tablespoons premade seasoning (as an alternative for BBQ seasoning)

– 1 can (15 ounces) tomato sauce (for BBQ sauce)

– 1/4 cup maple syrup (for BBQ sauce)

– 1/8 cup apple cider vinegar (for BBQ sauce)

– 1 tablespoon smoked paprika (for BBQ sauce)

– 1 tablespoon dried minced onion (for BBQ sauce)

– 1 tablespoon garlic powder (for BBQ sauce)

– 1 teaspoon salt (for BBQ sauce)

– 1/2 teaspoon pepper (for BBQ sauce)

– or 1 cup store-bought BBQ sauce (as a substitute for the sauce)

– 1 pound thinly sliced chicken breasts or thighs (for barbecue chicken bowls)

– 1 tablespoon avocado oil (for barbecue chicken bowls)

– 4 cups shredded red cabbage (for barbecue chicken bowls)

– 2 cups shredded carrots (for barbecue chicken bowls)

– 1 cup diced cucumber (for barbecue chicken bowls)

– 1 avocado (for barbecue chicken bowls)

– 2 cups cooked rice (white, quinoa, or cauliflower rice) (for barbecue chicken bowls)

Instructions

1-Preheat your oven to 400ยฐF (204ยฐC) and mix the BBQ seasoning ingredients thoroughly before sprinkling them evenly over the chicken. This step infuses the meat with smoky flavors right from the start.

2-In a saucepan, combine all the BBQ sauce ingredients and let them simmer on low heat to blend the tastes perfectly.

3-Heat 1 tablespoon of avocado oil in a large skillet over medium-high heat, then cook the chicken for 4 minutes on each side until it’s nicely browned, and set it aside to rest.

4-Toss the shredded red cabbage and carrots briefly in the same skillet to add a bit of char, then place the chicken on top and coat everything with the prepared BBQ sauce.

5-Bake the mixture in the oven for 10 minutes, followed by broiling for 5 minutes to get those crispy, caramelized edges that make this dish irresistible.

6-Let the chicken rest for a few minutes before slicing it into bite-sized pieces, then assemble your bowls by layering the cooked rice, cabbage, carrots, chicken, diced cucumber, and avocado slices. Finish with a drizzle of the remaining BBQ sauce for extra zest.
