– 3 carrots sliced about 0.5 cm thick (halve larger ones)
– 4 tablespoons flour
– 2 1/2 cups (625 ml) low sodium beef broth or stock
– 1 1/2 cups (375 ml) dry red wine, beer, or stout
– 1 1/2 cups (375 ml) water
– 2 tablespoons tomato paste
– 2 bay leaves
– 1 teaspoon dried thyme
– 1 cup frozen peas
– 2 potatoes cut into 1.5 cm cubes
– 1 tablespoon butter or oil
– 200 grams (6 oz) small mushrooms quartered or halved
Instructions
1-Heat a large heavy pot over medium-high heat and brown the seasoned beef in olive oil in batches, which takes about 5-7 minutes per batch; this step adds rich flavor, so don’t skip it.
2-Once the beef is set aside, sautรฉ the garlic, onion, carrots, and celery in the same pot until the onions turn translucent, usually around 3-4 minutes.
3-Stir in the flour and gradually add the beef broth while mixing to avoid lumps, then pour in the wine or beer, water, tomato paste, bay leaves, and thyme.
4-Return the beef to the pot, cover, and simmer on medium-low heat for about 1 hour and 15 minutes until the beef is tender and flavors meld together.
5-Add the potatoes and peas, then simmer uncovered for another 20 minutes to let them soften without overcooking.
6-If you’re using mushrooms, sautรฉ them in butter separately until browned and stir them in during the last 5 minutes of cooking.
7-Finally, adjust the salt and pepper to taste, and serve hot it’s ready to enjoy with some crusty bread for a complete meal.
