๐Ÿฅ˜ Experience the ultimate comfort food with tender beef that literally falls apart in a rich, herb-infused broth
๐Ÿฒ Warm up with this hearty soup that combines perfectly cooked vegetables and melt-in-your-mouth beef for a satisfying meal

  • Total Time: 1 hour 55 minutes
  • Yield: 4-6 servings

Ingredients

– 1.5 tablespoons olive oil, divided

– 500 grams (1 lb) stewing beef cut into 1.75 cm cubes

– 1/2 teaspoon salt and pepper

– 1 onion chopped

– 3 garlic cloves minced (about 1 tablespoon)

– 2 celery stalks sliced about 0.8 cm thick

– 3 carrots sliced about 0.5 cm thick (halve larger ones)

– 4 tablespoons flour

– 2 1/2 cups (625 ml) low sodium beef broth or stock

– 1 1/2 cups (375 ml) dry red wine, beer, or stout

– 1 1/2 cups (375 ml) water

– 2 tablespoons tomato paste

– 2 bay leaves

– 1 teaspoon dried thyme

– 1 cup frozen peas

– 2 potatoes cut into 1.5 cm cubes

– 1 tablespoon butter or oil

– 200 grams (6 oz) small mushrooms quartered or halved

Instructions

1-Heat a large heavy pot over medium-high heat and brown the seasoned beef in olive oil in batches, which takes about 5-7 minutes per batch; this step adds rich flavor, so don’t skip it.

2-Once the beef is set aside, sautรฉ the garlic, onion, carrots, and celery in the same pot until the onions turn translucent, usually around 3-4 minutes.

3-Stir in the flour and gradually add the beef broth while mixing to avoid lumps, then pour in the wine or beer, water, tomato paste, bay leaves, and thyme.

4-Return the beef to the pot, cover, and simmer on medium-low heat for about 1 hour and 15 minutes until the beef is tender and flavors meld together.

5-Add the potatoes and peas, then simmer uncovered for another 20 minutes to let them soften without overcooking.

6-If you’re using mushrooms, sautรฉ them in butter separately until browned and stir them in during the last 5 minutes of cooking.

7-Finally, adjust the salt and pepper to taste, and serve hot it’s ready to enjoy with some crusty bread for a complete meal.

Notes

๐Ÿฅฉ For the most tender meat, use well-marbled stewing beef and don’t rush the initial browning process
โฐ This soup tastes even better the next day as flavors meld, making it perfect for meal prep
๐Ÿ„ Add mushrooms in the last 5 minutes to prevent them from becoming too soft and mushy
