– 1 teaspoon dried rosemary or 1 sprig fresh rosemary

– 2 tablespoons cornstarch (or as needed)

– 2 tablespoons water (or as needed)

Instructions

1-First, prepare all ingredients by chopping vegetables and cutting the beef into cubes to ensure everything is ready for cooking. This step takes about 10 minutes and helps everything cook evenly.

2-Next, brown the beef cubes in a hot pan with a bit of oil for about 5-7 minutes until seared, enhancing that rich flavor we all love.

3-Then, remove the beef and sautΓ© onions, garlic, celery, and carrots until softened, approximately 5 minutes. Stir in tomato paste and herbs, cooking for another 2 minutes to deepen flavors. Return beef to the pot, add beef broth, red wine if you’re using it, bay leaves, salt, and pepper, then bring to a boil.

4-Reduce heat, cover, and simmer gently for 1.5 to 2 hours until beef is tender, following the directions closely. For added thickness, mix 2 tablespoons cornstarch with 2 tablespoons water to form a slurry, whisk it in, and boil for 1-2 minutes.
