– 3 tablespoons granulated sugar (40g)
– 2 teaspoons ground cinnamon
– 1/4 teaspoon fine salt
– 1/4 cup unsalted butter, melted and cooled (65g)
– 1 cup mashed bananas (about 2 large bananas, 250g)
– 1 tablespoon freshly squeezed lemon juice (15g)
– 1/4 cup unsalted butter, room temperature (56g)
– 1/2 cup granulated sugar (100g)
– 1/4 cup vegetable or canola oil (56g)
– 1 large egg plus one egg white, room temperature (86g)
– 1 3/4 cups all-purpose flour, fluffed and level (220g)
– 1 1/2 teaspoons baking powder (6g)
– 1/2 teaspoon baking soda
– 1/2 teaspoon fine salt
– 1/2 cup buttermilk, room temperature (120g)
– 1 cup chopped cookies (about 10 cookies, 90g)
– 1/2 cup cookie butter, warm
Instructions
1-Preheat oven to 350 F / 175 C and grease an 8.5 x 4.5 inch loaf pan with non-stick spray or butter. Line with a parchment paper sling.
2-Mash bananas and combine with lemon juice; set aside.
3-For the streusel, mix dry ingredients, then stir in melted butter gently to create a crumbly texture; set aside.
4-Beat butter and sugar until light and fluffy. Add oil, eggs, and mix well.
5-Add half the flour with baking powder, baking soda, and salt, mix until just combined.
6-Add buttermilk, mix gently, then add remaining flour until mostly combined.
7-Fold in mashed bananas and chopped cookies.
8-Pour batter into prepared pan, spread streusel evenly on top.
9-Bake on middle rack for 60-65 minutes until a toothpick inserted comes out with moist crumbs. Rotate halfway through and tent with foil if streusel browns too quickly.
10-Cool in pan for 30 minutes, then lift out with parchment and transfer to wire rack.
11-Drizzle warm cookie butter on top before serving.
