๐ŸŒถ๏ธ This easy-to-make recipe combines spicy chorizo with creamy gravy, perfect for a cozy morning or a delicious brunch treat.

  • Total Time: 20 minutes
  • Yield: 10 servings

Ingredients

– 10 biscuits

– 2 tubes (9 ounces each) pork chorizo

– 1/2 medium white or yellow onion finely diced

– 3 tablespoons all-purpose flour

– 2 1/2 cups whole milk

– 1 lb chorizo sausage Provides the rich, smoky flavor that forms the base of the gravy

– 2 cups all-purpose flour Used for both the biscuits and to thicken the gravy

– 1 cup milk Ensures a creamy texture

– 1 tsp smoked paprika Enhances the smoky taste

– 1/2 tsp black pepper Adds a mild heat

– 1 tsp baking powder Leavens the biscuits

– 3/4 cup buttermilk Reacts with baking powder for tender biscuits

– Pork chorizo Main flavor base

– All-purpose flour Thickening and baking

– Whole milk Creamy gravy

Instructions

1-First, preheat the oven to 425ยฐF (220ยฐC) if making homemade biscuits. Combine flour, baking powder, and a pinch of salt in a bowl, then add cold buttermilk and mix gently until just combined. Shape the dough into 10 biscuits and place them on a baking sheet for baking.

2-Bake the biscuits for 12-15 minutes until theyโ€™re golden brown and fluffy. While they bake, heat a skillet over medium and cook the 2 tubes of chorizo, breaking it apart until itโ€™s browned.

3-Next, add the 1/2 medium white or yellow onion finely diced to the skillet with the chorizo and cook for about 7 minutes until the onion is browned and fragrant.

4-Stir in 3 tablespoons of all-purpose flour and cook for 1 minute to thicken the mixture, creating a roux that will make your gravy smooth and rich.

5-Gradually add 2 1/2 cups of whole milk, stirring frequently as the mixture simmers on medium-low heat for 5 to 7 minutes until the gravy thickens to perfection.

6-Finally, season with salt and pepper to taste, then serve the warm gravy over the freshly baked or heated biscuits for a comforting meal.

Notes

๐ŸŒถ๏ธ Adjust the amount of chorizo or seasoning to control the spiciness of the gravy.
๐Ÿฝ๏ธ For fluffier biscuits, bake fresh from scratch or warm store-bought biscuits just before serving.
๐Ÿฅ„ Stir the gravy continuously while simmering to prevent lumps and sticking to the pan.
