Ingredients

– 2 cups blueberries (fresh or frozen)

– Β½ cup sugar or honey

– 1 cup plus 2 tablespoons water (divided)

– 1 tablespoon cornstarch

Instructions

1-First, in a medium saucepan, combine 1 cup of water, Β½ cup sugar or honey, and 2 cups blueberries. Stir the mixture and bring it to a boil, then reduce the heat to low and simmer for 10 minutes, stirring occasionally, until the blueberries soften and the liquid reduces. This step helps release all those wonderful flavors from the berries.

2-Next, turn off the heat, and in a separate bowl, mix 1 tablespoon cornstarch with the remaining 2 tablespoons water to form a slurry.

3-Add this slurry to the saucepan, stir well, and let it sit for 5 minutes to thicken. At this point, you can serve the syrup with the blueberry bits as is, or blend it until smooth if you prefer a different texture.
