Ingredients

– 2 large flour tortillas

– 4 large eggs

– 1 cup black beans

– 1 cup shredded cheddar cheese

– 1 cup diced bell peppers

– 1 medium diced onion

– 1/2 cup salsa

– 2 tbsp olive oil

Instructions

1-Gather all ingredients and prepare vegetables by dicing bell peppers and onion.

2-Heat olive oil in a skillet over medium heat and sautรฉ the onions and peppers until soft, about 5 minutes.

3-Crack eggs into a bowl, whisk thoroughly, and pour into the skillet with veggies. Cook until eggs are scrambled and fully set.

4-Warm tortillas on a separate pan over low heat for 1-2 minutes each to make them more pliable.

5-Lay each tortilla flat and add scrambled eggs and vegetable mixture in the center.

6-Spoon black beans evenly on top, followed by shredded cheddar cheese and a generous dollop of salsa.

7-Fold the sides over the filling and roll tightly to enclose the ingredients.

8-Optionally, place burritos seam side down on a heated skillet for 1-2 minutes per side to crisp the exterior. Serve warm.
