– 1 lb sausage, browned

– 2 cups shredded cheddar cheese

– 8 flour tortillas (8 inches each)

– 6 eggs

– 2 cups half-and-half

– 1 tablespoon all-purpose flour

– 1/2 teaspoon salt

– 3 oz package bacon bits

Instructions

1- Getting breakfast enchiladas just right starts with following a clear plan, and this recipe makes it fun and straightforward. Begin by spraying a 13ร—9 inch baking pan with cooking spray to keep everything from sticking. In a large bowl, mix the browned sausage, 1 cup of shredded cheddar cheese, and half of the bacon bits to create your filling.

2- Next, place one-eighth of this mixture down the center of each of the 8 flour tortillas, roll them up, and place them seam side down in the baking dish. In another large bowl, beat the 6 eggs, 2 cups half-and-half, 1 tablespoon all-purpose flour, and 1/2 teaspoon salt together, then pour this mixture evenly over the tortillas.

3- At this point, cover the dish and refrigerate it overnight or bake it right away. When youโ€™re ready, preheat the oven to 350 degrees Fahrenheit, uncover the dish, and sprinkle the remaining 1 cup cheese and bacon bits on top. Finally, cover and bake for 35 minutes, then uncover and bake for an additional 10 minutes or until set and the cheese is melted.
