1 cup all-purpose flour

2 tbsp cornstarch

1 tsp baking powder

1 tsp salt

1/2 tsp black pepper

2 large eggs

1/4 cup cold water

500g chicken breast for frying

Oil for deep frying

Instructions

1-Bring to boil: Bring your large saucepan two-thirds full of water to boil for the spaghetti.

2-Cook pancetta: Put pancetta pieces into frying pan and cook on medium heat for about 5 minutes, until crispy and golden. Remove pan from heat and set aside.

3-Mix eggs and cheese: Beat eggs in a bowl, then mix in the grated parmesan cheese and some freshly ground black pepper. Set this mixture aside.

4-Cook spaghetti: Add spaghetti to the boiling water and cook until al dente, about 8-10 minutes. Save some pasta water, then drain the pasta.

5-Combine: Immediately add hot spaghetti to the pancetta pan off the heat. Quickly pour in the egg and cheese mixture, stirring vigorously to create a creamy sauce without scrambling the eggs. Add reserved pasta water a little at a time if needed to achieve desired sauce consistency.

6-Serve: Serve hot topped with additional parmesan cheese and freshly ground black pepper to taste.
