Ingredients

– 2 tablespoons extra-virgin olive oil

– 1 large yellow onion, chopped

– 1/2 teaspoon salt

– 1 (3-pound / ~1.36 kg) butternut squash, peeled, seeded, and cubed

– 3 cloves garlic, chopped

– 1 tablespoon fresh sage, chopped

– 1/2 tablespoon fresh rosemary, minced

– 1 teaspoon grated fresh ginger

– 3 to 4 cups (720 960 ml) vegetable broth

– Freshly ground black pepper, to taste

– 2 tablespoons chopped parsley for serving

– 1/4 cup toasted pepitas for serving

– crusty bread (slices) for serving

Instructions

1-Step 1: Heat the Oil and Sautรฉ Onion Heat 2 tablespoons extra-virgin olive oil in a large pot over medium heat. Add the chopped onion and 1/2 teaspoon salt. Sautรฉ until soft and translucent, about 5 to 8 minutes. Season with black pepper.

2-Step 2: Add and Cook Squash Add the cubed butternut squash. Cook, stirring occasionally, until it begins to soften, about 8 to 10 minutes. This step builds flavor in your butternut squash soup recipe.

3-Step 3: Stir in Aromatics Stir in the chopped garlic, sage, rosemary, and grated fresh ginger. Cook 30 seconds to 1 minute until fragrant. These herbs make this roasted garlic butternut squash soup special. For true roasted garlic, roast whole cloves wrapped in foil at 400ยฐF for 30 minutes first, then squeeze in.

4-Step 4: Add Broth and Simmer Pour in 3 cups vegetable broth. Add up to 4 cups for thinner consistency. Bring to a boil, cover, and reduce to simmer. Cook until squash tenders, about 20 to 30 minutes.
