Ingredients

– 2 skinless boneless chicken breasts

– 2 tablespoons Cajun spice

– 2 tablespoons olive oil

– 1 clove garlic

– 2 tablespoons butter

– 500 ml (2 cups) double or heavy cream

– 120 g (1 1/4 cup) freshly grated Parmesan cheese

– Salt to taste

– 450 g (1 lb) fettuccine pasta

Instructions

1-Cook the pasta according to package instructions in salted water.

2-Slice chicken into bite-sized pieces and coat with Cajun spice.

3-Heat olive oil in a pan over medium heat and cook chicken until fully done, about 5-7 minutes. Remove chicken from pan.

4-Reduce heat to low, melt butter in the same pan, add grated or pressed garlic and cook for 30 seconds without burning.

5-Add double cream and heat for about 5 minutes.

6-Stir in grated Parmesan cheese until the sauce comes together, then remove from heat.

7-Drain pasta, reserving half a cup (125 ml) of pasta water.

8-Return pasta to pan, add sauce and cooked chicken; toss to combine.

9-Season with salt and add reserved pasta water if the sauce is too thick.
