🍰 Easy-to-make layered shortcakes that combine fresh fruit with whipped cream for a show-stopping treat

  • Total Time: 15 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

2 pound cakes sliced and used as the cake layers

1 cup heavy cream for whipping into the topping

2 tablespoons powdered sugar sweetens and stabilizes the whipped cream

1 teaspoon vanilla adds flavor to the cream

Fresh sliced strawberries for the red sections and garnish

Fresh blueberries for the blue sections and garnish

8 shortcake biscuits (store-bought or homemade) 3-4 inches diameter for each shield

2 cups fresh strawberries (hulled and sliced) one common measurement from the FAQ version

Blue and red gel food coloring to tint some berries if you want more vivid colors

2 cups heavy whipping cream for the whipped cream in the shortcake variation

23 tablespoons powdered sugar to sweeten the whipped cream

1/2 cup white fondant or marshmallows for the white star in the center

2 cups flour if making shortcake biscuits from scratch

1/4 cup sugar if making shortcake biscuits from scratch

1 tablespoon baking powder if making shortcake biscuits from scratch

1/2 cup cold butter if making shortcake biscuits from scratch

3/4 cup milk if making shortcake biscuits from scratch

Instructions

1-First Step: Gather and prep your tools and ingredients. Make sure you have a chilled mixing bowl, a hand mixer or whisk, a circle cutter (about 3 to 4 inches), and serving plates. Slice both pound cakes into even slices about 1/2 inch thick so you can cut clean circles from each slice.

2-Second Step: Cut cake circles. Use the circle cutter to press out circles from each sliced piece of pound cake. You want two circles per serving for layers. If a cake has a domed top, level it slightly so circles stack evenly.

3-Third Step: Make whipped cream. Place 1 cup heavy cream in a chilled bowl. Beat on medium speed until soft peaks form. Add 1 teaspoon vanilla and 2 tablespoons powdered sugar, then beat again until stiff peaks form. The cream should hold shape but still be glossy.

4-Fourth Step: Assemble the shields.* Place one cake circle on your serving plate.* Spread a generous layer of whipped cream on top of the cake circle.* Add a layer of fresh blueberries and/or sliced strawberries.* Top with a second cake circle and repeat the whipped cream and fruit layering if you like extra height.* Arrange blueberries and strawberries on top to create the Captain America shield design: a center white star (use a marshmallow cut or small fondant star), a ring of blueberries, then an outer ring of sliced strawberries for the red sections.

5-Final Step: Chill and serve. Chill for 10 to 15 minutes if you want the cream to set slightly. Serve within the same day. This version serves 8 and takes about 15 minutes of total prep time.

6-First Step: Prepare biscuits or buy them. You can bake 8 round shortcake biscuits (3-4 inches diameter) or use store-bought. If baking from scratch, follow a basic biscuit recipe using 2 cups flour, 1/4 cup sugar, 1 tablespoon baking powder, 1/2 cup cold butter, and 3/4 cup milk. Bake roughly 12 to 15 minutes until golden.

7-Second Step: Prep fruit and cream.* Slice 2 cups fresh strawberries and place them in a bowl.* Divide strawberries into two bowls if you plan to dye one batch blue with gel food coloring for a stronger color.* Whip 2 cups heavy cream with 2 tablespoons sugar until stiff peaks form.

8-Third Step: Assemble each shield as described earlier: biscuit bottom, fruit, whipped cream, blue fruit, more cream, top biscuit, decorate with a white fondant star in the center. Chill 15 minutes before serving.
