Ingredients

– ½ cup (113 g) unsalted butter softened at room temperature

– ¾ cup (165 g) dark brown sugar

– ¼ cup (50 g) granulated sugar

– 1 large egg room-temperature

– 1 tsp vanilla extract

– ½ tsp baking powder

– ½ tsp baking soda

– ½ tsp salt plus extra for topping

– 1 ¼ cups (175 g) all-purpose flour

– 1 ¼ cups (≈122 g) old-fashioned rolled oats

– ½ cup (≈70 g) toffee bits or chopped toffee pieces

– 14 soft caramel pieces (≈6 g each) for the center filling

Instructions

1-Cream butter with both sugars until light and fluffy, which takes about 3-4 minutes.

2-Add the egg and vanilla; beat briefly for about 30 seconds until smooth.

3-Combine salt, baking powder, baking soda, and flour; fold in just until the flour is barely visible, and avoid overmixing.

4-Stir in the oats and toffee bits.

5-Shape dough into 3-tablespoon portions, press a soft caramel ball into the center of each, then reseal the dough around it.

6-Chill dough balls for 2-24 hours to firm up, with a minimum of 2 hours.

7-Preheat oven to 365°F (185°C). Line baking sheets with parchment and space cookies 2 inches apart. Sprinkle a pinch of flaked salt on each ball.

8-Bake for 10-12 minutes, watching for golden edges. If a cookie spreads unevenly, reshape the edges quickly with a spatula right after removal.

9-Finish with a light dusting of flaked salt while still warm. Cool on the sheet for 5 minutes, then transfer to a rack.
