Instructions
1-Preheat the oven to 350 degrees Fahrenheit and grease a loaf pan to keep the bread from sticking.
2-In a large bowl, whisk together the dry ingredients: 1 and 1/2 cups all-purpose flour, 1 teaspoon baking powder, 3/4 teaspoon baking soda, 1/4 teaspoon salt, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, and 1/4 teaspoon ground nutmeg.
3-In a separate medium bowl, whisk together the wet ingredients: 1/2 cup oil, 2 large eggs, 1 cup packed brown sugar, 1/3 cup applesauce or yogurt, 1 teaspoon vanilla extract, and 1 and 1/2 cups shredded carrots until everything is well combined.
4-Pour the wet mixture into the dry ingredients and gently whisk until just combined, then fold in any optional add-ins like nuts or dried fruit.
5-Transfer the batter to the prepared loaf pan and bake for 55 to 65 minutes, covering loosely with foil halfway through to avoid over-browning.
6-Test for doneness by inserting a toothpick; it should come out mostly clean, then allow the bread to cool completely on a wire rack before removing from the pan.
7-If you want, add an optional cinnamon cream cheese frosting by beating softened cream cheese with butter until smooth, then mixing in confectionersβ sugar, vanilla, cinnamon, and salt until creamy, and spreading it on the cooled loaf.
