– Β½ cup (8 tablespoons; 113g) unsalted butter, cubed and very cold

– 1 cup plus 2 tablespoons (270ml) cold buttermilk, divided

– 2 teaspoons (14g) honey

– 1 cup (125g) shredded cheddar cheese

– 2 tablespoons (28g) unsalted butter, melted for topping

– ΒΌ teaspoon garlic powder for topping

– 1 teaspoon dried or fresh chopped parsley for topping

Instructions

1-Preheat the oven: Preheat the oven to 425Β°F (218Β°C). In a large bowl, combine the flour, baking powder, baking soda, garlic powder, and salt. Cut in the cold cubed butter until coarse crumbs form. Fold in the shredded cheddar cheese.

2-Create the dough: Create a well in the center, pour in 1 cup of the cold buttermilk, and drizzle the honey over it. Gently fold the mixture until the dough just starts to come together, being careful not to overwork it. Turn the dough onto a floured surface, gather it gently with floured hands until sticky, then flatten into a ΒΎ-inch thick rectangle.

3-Folding and Shaping the Dough: Fold the dough like a business letter, turn it horizontally, and flatten again; repeat this folding and flattening process three more times for a total of four folds. Cut the dough into 2.5- or 3-inch circles using a biscuit cutter without twisting. Arrange the biscuits closely together in a cast iron skillet or on a parchment-lined baking sheet so they touch.

4-Baking and finishing: Brush the tops with the remaining 2 tablespoons of buttermilk and bake for 18 to 22 minutes until golden brown.
