Ingredients

– 1/4 cup tomato paste

– 2 cans (15 ounces each) drained and rinsed white beans

– 1/2 cup boiling water

– salt and pepper to taste

– 1 cup shredded mozzarella cheese

– 1/3 cup grated parmesan cheese

– fresh basil for garnish

Instructions

1-Preheat your oven to 475Β°F (245Β°C).

2-Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium heat.

3-SautΓ© 4 minced garlic cloves for 2 minutes.

4-Stir in 1/4 cup of tomato paste and cook for 1 more minute.

5-Add 2 cans (15 ounces each) of drained and rinsed white beans, 1/2 cup of boiling water, salt, and pepper, then mix thoroughly.

6-Top with 1 cup of shredded mozzarella cheese and 1/3 cup of grated parmesan cheese.

7-Bake for 8 to 10 minutes until the cheese is melted and slightly crispy. Optionally, broil for extra crispiness.
