  • Total Time: 7 hours 15 minutes
  • Yield: 9 servings 1x

Ingredients

Scale

4 cups (about 22 ounces) pitted and halved fresh red cherries

1/3 cup water

1/2 cup granulated sugar for the cherry syrup

2 teaspoons lemon juice

2 to 4 tablespoons Amaretto liqueur

1 1/2 cups heavy cream

16 ounces mascarpone cheese

3/4 cup granulated sugar for the mascarpone filling

2/3 cup cherry syrup from the syrup recipe

1 teaspoon vanilla extract

1 teaspoon almond extract

24 Savoiardi ladyfingers (1 7-ounce package)

Instructions

1-Prepare all ingredients, including washing and pitting fresh cherries, and set up your workspace with all necessary tools.

2-Whip the 1 1/2 cups heavy cream until soft peaks form; fold in 16 ounces mascarpone cheese, 3/4 cup granulated sugar, 2/3 cup cherry syrup, 1 teaspoon vanilla extract, and 1 teaspoon almond extract gently to maintain airiness.

3-Dip the 24 Savoiardi ladyfingers briefly in the cherry syrup mixed with Amaretto, ensuring they absorb flavor without becoming soggy.

4-Layer the soaked ladyfingers in an 8-inch square dish, then spread a layer of the mascarpone mixture.

5-Sprinkle a portion of cherries evenly over the mascarpone layer.

6-Repeat layering once more, finishing with a smooth mascarpone top layer.

7-Dust the top and decorate with remaining cherries.

8-Refrigerate for at least 6 hours to set flavors, then serve chilled.
