Ingredients

– 100g Copha, chopped

– 80g dark cooking chocolate (45%), chopped

– 2 ยพ cups (110g) puffed rice cereal

– ยฝ cup (40g) desiccated coconut

– 2 teaspoons cocoa powder

– 2 liters choc-mint ice cream, softened

Instructions

1-Melt Copha and dark chocolate together in a heatproof bowl over simmering water, stirring until smooth.

2-In a large bowl, mix puffed rice cereal, desiccated coconut, and cocoa powder. Pour the melted Copha mixture over and combine well.

3-Place 8.5cm diameter egg rings on a lined baking tray. Spoon two flat tablespoons of the crackle mixture into each ring, pressing down firmly to compact. Remove the rings and repeat to make 16 discs. Freeze for 15 minutes or until firm.

4-On a lined flat tray, place the egg rings and spoon softened ice cream into each to form eight patties about 4 cm thick. Smooth the tops and freeze for 10 minutes.

5-Assemble by sandwiching ice cream patties between two crackle discs. Freeze for 1 hour or serve immediately.
