Ingredients
– 3 large Granny Smith or Honeycrisp apples, washed and dried
– 10 ounces milk or dark chocolate melting wafers
– 8 ounces soft caramel squares, unwrapped
– 2 tablespoons heavy cream
– 1 cup a complementary variety of chocolate melting wafers (optional)
– Mini candies, chopped nuts, or other small toppings of choice
Instructions
1-Line a sheet pan with parchment paper or a silicone baking mat.
2-Slice each apple vertically into 4 or 5 slices about 1/2 inch to 3/4 inch thick. Remove stems and carve out seeds and core without slicing through.
3-Insert a 10 mm wide food-grade wooden popsicle stick halfway into the bottom center of each apple slice. If needed, make a small slit for easier insertion.
4-Melt the chocolate wafers using a double boiler or microwave according to package instructions.
5-Pat the apple slices thoroughly dry with paper towels on all sides before dipping.
6-Dip each apple slice completely in melted chocolate, covering slightly past where the stick meets the fruit. Allow excess chocolate to drip off.
7-Place slices on the prepared sheet pan, not touching each other, and refrigerate for 5-10 minutes to set the chocolate.
8-Melt caramel squares with 2 tablespoons heavy cream in a microwave-safe bowl, heating in 20-30 second intervals and stirring until smooth. Set aside to cool.
9-If desired, melt additional chocolate wafers for drizzling. Allow both caramel and extra chocolate to cool to warm and fluid but not hot.
10-Drizzle caramel over the chocolate-coated apple slices, then add a chocolate drizzle if using. Immediately sprinkle with chosen toppings.
11-Refrigerate another 10-15 minutes to completely set chocolate and caramel.
12-Serve apples within a few hours of preparation; store refrigerated until ready to eat.
