Ingredients

– 2 cups all-purpose flour (250 grams) Forms the base of the bread.

– 1/4 cup light brown sugar, packed (50 grams) Adds depth with its caramel notes.

– 2 large eggs at room temperature Binds the ingredients together.

– 2 teaspoons pure vanilla extract Adds aromatic flavor.

– 2 cups mashed bananas (about 4 large or 5 medium bananas, 440 grams) Offers natural sweetness and moisture.

– 1/2 cup chopped walnuts (optional, 80 grams) Provides crunch and extra nutrition.

Instructions

1- Preheat the oven to 350Β°F (177Β°C). Grease a 9Γ—5 inch loaf pan with nonstick spray and line it with parchment paper if you want.

2- In a bowl, whisk together the flour, baking powder, baking soda, cinnamon if you’re using it, and salt.

3- In a mixer, beat the softened butter, granulated sugar, and brown sugar for 4-5 minutes until it’s light and fluffy.

4- Add the eggs one at a time, beating well after each one, then mix in the vanilla extract.

5- Stir in the mashed bananas until they’re fully mixed in.

6- Add the dry ingredients to the wet ones and mix just until combined; make sure not to overmix to keep it moist.

7- If you’re adding walnuts, fold them in now.

8- Pour the batter into the prepared pan and spread it out evenly.

9- Bake for 55-65 minutes, or until a toothpick comes out clean. If the top gets too brown, cover it with foil loosely.

10- Let the bread cool in the pan for 20 minutes, then take it out and cool it completely on a wire rack.
