Ingredients

– 2 lbs (about 900 g) ground beef (80% or 85% lean)

– 1 medium onion, finely chopped (about 1 cup or 150 g)

– 1 teaspoon oil

– 2 large eggs

– 3 garlic cloves, minced

– 2 tablespoons ketchup

– 3 tablespoons fresh parsley, finely chopped

– 3/4 cup Panko breadcrumbs or gluten-free breadcrumbs (about 75 g)

– 1/3 cup milk (about 80 ml)

– 1 teaspoon Italian seasoning (or to taste)

– 1 teaspoon salt

– 1/2 teaspoon ground black pepper

– 3/4 cup ketchup (about 180 g) for the glaze

– 1 1/2 teaspoons white vinegar for the glaze

– 2 tablespoons brown sugar for the glaze

– 1/2 teaspoon garlic powder for the glaze

– 1/2 teaspoon onion powder for the glaze

Instructions

1-Preheat the oven to 350ยฐF (175ยฐC) and line a rimmed baking sheet with parchment paper or foil.

2-Heat 1 teaspoon oil in a medium skillet over medium heat. Sautรฉ the chopped onion until softened and golden, about 5-7 minutes. Transfer to a plate and let it cool slightly.

3-In a large bowl, combine 2 lbs (about 900 g) ground beef, the cooled onions, 2 large eggs, 3 minced garlic cloves, 2 tablespoons ketchup, 3 tablespoons finely chopped fresh parsley, 3/4 cup Panko breadcrumbs or gluten-free breadcrumbs, 1/3 cup milk, 1 teaspoon Italian seasoning, 1 teaspoon salt, and 1/2 teaspoon ground black pepper. Mix gently just until combined to keep the meat tender.

4-Shape the mixture into a loaf approximately 8 inches long, 4 inches wide, and 3 inches tall on the prepared baking sheet.

5-Bake uncovered for 40 minutes.

6-While it’s baking, mix 3/4 cup ketchup, 1 1/2 teaspoons white vinegar, 2 tablespoons brown sugar, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder to prepare the glaze.

7-After 40 minutes, spread the glaze evenly over the meatloaf.

8-Return the meatloaf to the oven and bake for an additional 20 minutes or until the internal temperature reaches 160ยฐF (71ยฐC).

9-Remove from the oven and allow to rest for 10-15 minutes before slicing to let juices redistribute.
