– 12 medium button or cremini mushrooms, cleaned with stems removed and discarded
– Olive oil spray
– 8 ounces (about 227 grams) cream cheese, softened (full fat recommended)
– 1/2 cup fresh or panko breadcrumbs
– 2 garlic cloves, minced
– 1/2 tablespoon Worcestershire sauce
– 1/2 cup finely chopped green onions
– 1/2 cup freshly grated Parmesan cheese
– 2-3 tablespoons fresh chopped Italian parsley
– 1 cup cooked shelled crab, finely chopped (King Crab preferred, but other crab varieties or canned lump crab meat can be used)
– Salt and pepper to taste
Instructions
1-Follow these directions closely for the best outcome. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly spray mushrooms with olive oil spray and place them cap side down on a baking sheet or dish.
2-In a large bowl, combine the cream cheese, breadcrumbs, garlic, Worcestershire sauce, green onions, Parmesan cheese, parsley, and crab meat. Season the mixture with salt and pepper.
3-Scoop about 1 1/2 tablespoons of the mixture into each mushroom cap. Bake for 20 minutes. At the last minute, turn on the broiler to lightly brown the tops, watching closely to prevent burning.
