Ingredients
– 8 oz penne pasta
– 1 lb large shrimp, peeled and deveined
– 1 tablespoon Cajun seasoning
– 2 tablespoons Cajun seasoning (divided or adjusted to taste)
– 2 tablespoons unsalted butter
– 2 garlic cloves, minced
– 1/2 cup diced tomatoes
– 1 1/2 cups heavy whipping cream
– 1/2 cup grated parmesan cheese, plus more to serve
– 2 tablespoons parsley for garnish (optional)
Instructions
1-Cook 8 oz penne pasta in salted water until al dente based on package instructions. Reserve some pasta water, then drain and cover the pasta to keep it warm.
2-Coat 1 lb large shrimp with 1 tablespoon Cajun seasoning. Heat 1 tablespoon oil in a deep skillet over medium heat and sautΓ© the shrimp for 1-2 minutes per side until opaque, then remove and cover to keep warm.
3-In the same skillet, melt 2 tablespoons unsalted butter with 2 minced garlic cloves and cook for 30 seconds until fragrant. Add 1/2 cup diced tomatoes and sautΓ© for 2-3 minutes.
4-Pour in 1 1/2 cups heavy whipping cream, the remaining 1 tablespoon Cajun seasoning, and 1/2 cup grated parmesan cheese. Bring to a simmer, reduce heat to medium-low, and cook for 2-3 minutes until the sauce thickens.
5-Return the shrimp and pasta to the skillet; stir to coat everything with the sauce. If the sauce is too thick, add some reserved pasta water to thin it out.
6-Serve right away, topped with extra parmesan cheese and 2 tablespoons chopped parsley if you like. This step can be similar to easy pasta recipes on our site for more ideas.

πΆοΈ Adjust the amount of Cajun seasoning to control spice level, as different varieties may vary in heat and saltiness.
π₯ Add red pepper flakes to increase spiciness.
π€ Use large fresh shrimp that are peeled and deveined for best results; frozen shrimp can be thawed and used, but pre-cooked shrimp are not recommended as they can become tough when cooked again.
