Ingredients

– 3 boneless, skinless chicken breasts

– 3 tablespoons olive oil, divided

– 8 ounces mushrooms, thinly sliced

– 1/2 white onion, diced small

– 2 teaspoons garlic, minced

– 1 cup marsala wine (not cooking marsala wine)

– 2 cups chicken broth

– 3 cups heavy cream

– 1 pound orecchiette pasta, uncooked (or any other short pasta shape)

– 1 teaspoon salt

– 1 teaspoon pepper

– 1 teaspoon dried oregano

– 1 teaspoon dried basil

– 1/2 teaspoon dried thyme

– 1 to 2 tablespoons cornstarch

– 2 tablespoons milk

– 1/4 cup freshly grated parmesan

– 1/2 bunch fresh parsley, chopped

Instructions

1-Cut the chicken breasts into small, bite-sized pieces to ensure even cooking.

2-Heat a large pot over medium-high heat and add 2 tablespoons of olive oil, then add the chicken, season with salt and pepper, and cook until no longer pink. Set the chicken aside once done.

3-Add the remaining 1 tablespoon of olive oil to the pot, along with the sliced mushrooms, onion, and garlic; sautรฉ for 2-3 minutes until fragrant and softened.

4-Return the chicken to the pot and mix everything together.

5-Pour in the chicken broth, heavy cream, marsala wine, pasta, oregano, basil, and thyme. Bring to a boil, cover with a lid, reduce heat to low, and cook for 10-12 minutes or until the pasta is tender.

6-Remove the lid, mix the cornstarch with the milk, and stir it into the pasta. Bring to a boil for about 5-10 minutes until the sauce thickens, adding more cornstarch if needed.

7-Stir in the parmesan cheese and garnish with the fresh parsley before serving immediately.
