1/2 cup granulated sugar for the cream

3 tablespoons granulated sugar for the mascarpone mixture

1/2 teaspoon ground cardamom for the cream

1/2 teaspoon ground cardamom for the mascarpone mixture

1/4 teaspoon ground cardamom for the coffee, optional

2 cups mascarpone cheese

150 grams unsweetened pistachio butter

1 tablespoon unsweetened pistachio butter

1 cup espresso or instant coffee

40 to 45 Italian ladyfingers

1/2 cup crushed pistachios for garnish

Instructions

1-First: brew your coffee and mix it with the pistachio butter and a dash of cardamom if you like, then let it cool down completely. This base helps soak the ladyfingers just right without making them too soggy.

2-Next, in a chilled bowl, whip the heavy cream with 1/2 cup sugar and 1/2 teaspoon cardamom until you get stiff peaks that’s the secret to that airy feel. In the same bowl, blend the mascarpone cheese with the remaining pistachio butter, 3 tablespoons sugar, and another 1/2 teaspoon cardamom until it’s smooth and creamy. Gently fold the whipped cream into this mixture to keep it light and fluffy.

3-Now for the fun part: grab a 9Γ—13 inch baking dish and dip each ladyfinger briefly on one side into the cooled coffee mix. Layer them evenly in the dish to form the base. Spread half of your cream mixture over the top and smooth it out nicely.

4-Repeat with another layer of dipped ladyfingers, then add the rest of the cream on top. Finish it off with a sprinkle of crushed pistachios for that extra crunch. Cover the dish and pop it in the fridge for at least 6 hours the longer, the better for those flavors to blend.
