– 1 1/2 cups packed fresh spinach leaves

– 1/2 cup heavy cream or half and half

– 1/4 cup chopped parmesan cheese

– 1/4 cup fresh chopped basil

Instructions

1-First, gather and prep all ingredients: dice the onion, mince the garlic, and wash the spinach to ensure everything flows seamlessly.

2-Next, in a large pot, sautΓ© the diced onion and garlic over medium heat until they turn translucent, about 3-4 minutes, to release their aromatic flavors.

3-Then, add the 1/4 cup all-purpose flour to thicken, followed by 3 cups vegetable broth, the 14.5-ounce can of diced tomatoes, 8 ounces of tomato sauce, 1/2 teaspoon Italian seasoning, 1 teaspoon dried basil, and salt and pepper to taste; bring this mixture to a boil.

4-Once boiling, stir in the 8 ounces of refrigerated cheese tortellini and cook according to package instructions, usually 3-5 minutes, until tender.

5-Lower the heat, then mix in the 1 1/2 cups packed fresh spinach leaves, 1/2 cup heavy cream or half and half, 1/4 cup chopped parmesan cheese, and 1/4 cup fresh chopped basil, letting everything blend for a few minutes.
