Toast the panko breadcrumbs by spreading them on a baking tray, spraying them lightly with oil, and baking for 3 to 5 minutes until they turn light golden. Transfer the toasted breadcrumbs to a bowl once theyβre done.
2-Next, place a rack on a baking tray to promote even baking and crispiness. In another bowl, whisk together the egg, mayonnaise, mustard, flour, salt, and pepper to make the batter, then add the chicken pieces and toss them until theyβre evenly coated. Using tongs, pick up each piece of battered chicken and place it into the bowl of toasted panko breadcrumbs.
