Ingredients

– 700g (1.4 lb) small potatoes (12 14)

– 1 to 1.2 kg (2 2.4 lb) medium potatoes (6 8)

– 1 tablespoon salt for boiling

– 30g (2 tablespoons) unsalted butter, melted

– 1 tablespoon olive oil

– 3/4 teaspoon salt for sprinkling

– 1/4 teaspoon black pepper

– finely chopped parsley for garnish

Instructions

1-First: boil the potatoes in water with 1 tablespoon of salt until they’re tender; this takes about 20 25 minutes for small ones or around 30 minutes for medium. Once done, drain them and let them dry for 5 minutes to get rid of extra moisture.

2-Next: place the potatoes on a tray and gently smash them with a fork or masher go for a thinner smash to get those super crunchy, nubbly edges without breaking them apart completely.

3-After smashing, let the potatoes steam dry for another 5 minutes; this step is key for that extra crisp.

4-Then, drizzle the melted butter and olive oil over them, and sprinkle on 3/4 teaspoon salt and 1/4 teaspoon black pepper for a burst of flavor.

5-Pop them in an oven preheated to 200Β°C (390Β°F) and bake for 45 minutes if you’re using small potatoes, or 55 minutes for medium ones keep an eye out until they’re deep golden and crispy, no need to flip.

6-Once baked, serve them hot and top with chopped parsley if you like.
