Ingredients
– 2 pounds boneless skinless chicken thighs
– Kosher salt and pepper, to taste
– 1/3 cup bourbon, whiskey, apple juice, or chicken broth
– 3/4 cup brown sugar
– 3/4 cup soy sauce
– 2 cloves garlic, minced
– 2 tablespoons cornstarch
– 3 tablespoons cold water
Instructions
1-First, season the chicken thighs with kosher salt and pepper on both sides and place them in the bottom of the crockpot.
2-In a medium bowl, mix the bourbon (or your chosen substitute), brown sugar, soy sauce, and minced garlic until everything blends smoothly.
3-Pour this mixture evenly over the chicken in the crockpot, making sure every piece is covered for maximum taste.
4-Cover the crockpot and cook on low for 4 hours or on high for 3 hours, letting the slow cooker do the hard work while you relax.
5-About 30 minutes before the cooking time ends, combine the cornstarch and cold water until smooth, then stir it into the sauce to thicken it up nicely.
6-Once it’s done, serve the chicken over rice and add green onions for a fresh touch if you like.
