Instructions

1-First Step: Preheat the oven to 350°F (175°C). Arrange the bottom halves of the 8 croissants in a single layer on a baking sheet. Top each with a slice of deli ham and a slice of sharp cheddar cheese.

2-Second Step: Prepare the eggs by whisking together the 6 large eggs, ⅓ cup (80 ml) whole milk, a pinch of salt, and pepper in a bowl until well combined.

3-Third Step: Cook the scramble by lightly greasing a skillet with cooking spray or oil and heating it over medium-high. Pour in the egg mixture and stir gently, scraping the pan’s bottom with a spatula. After 2 3 minutes, when the eggs are mostly set, stir in the ½ cup (≈50 g) shredded mozzarella until it melts, then remove from heat.

4-Fourth Step: Assemble the sandwiches by spooning the scrambled egg mixture onto the ham and cheddar on the croissant bottoms.
