🍮 Its multi-layered construction and smooth buttercream create a luxurious dessert perfect for special occasions or a Middle Eastern-inspired treat.

  • Total Time: 2 hours 10 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

6 egg whites for cake

6 tablespoons fine sugar for cake

1 ½ tablespoons all-purpose flour for cake

150 grams ground hazelnuts for cake

6 egg yolks for buttercream filling

3 tablespoons cornstarch for buttercream filling

6 tablespoons granulated sugar for buttercream filling

340 milliliters milk for buttercream filling

1 teaspoon vanilla extract for buttercream filling

170 grams soft unsalted butter for buttercream filling

200 grams granulated sugar for caramel filling

220 milliliters heavy cream for caramel filling

130 grams ground hazelnuts for caramel filling

23 tablespoons ground hazelnuts for garnish

Unsweetened cocoa powder for garnish

Instructions

1-First, preheat your oven to 180°C (350°F) and prepare your cake pans by greasing them well. This helps the cake release easily after baking.

2-Next, whip the egg whites until they form stiff peaks, then gradually add the fine sugar for a fluffy base.

3-Once that’s done, gently fold in the all-purpose flour and ground hazelnuts to maintain that airy texture.

4-For the fillings, begin with the buttercream by heating the milk and whisking in the cornstarch and sugar until thickened.

5-Then, mix in the egg yolks, vanilla, and butter for a smooth cream.

6-Now, pour the batter into your prepared pans and bake for about 25-30 minutes, checking with a toothpick for doneness.

7-While it cools, prepare the caramel filling by melting sugar until golden, then stirring in heavy cream and ground hazelnuts.

8-Layer the cake with the buttercream and caramel for that multi-layer effect.

9-Finally, garnish with ground hazelnuts and a light dusting of unsweetened cocoa powder for an elegant finish.
