– Β½ cup (85 g) powdered sugar, sifted
– ΒΌ teaspoon instant coffee powder
– ΒΌ teaspoon salt (omit if using salted butter)
– 2 teaspoons unsweetened cocoa powder, sifted
– 1 teaspoon vanilla essence or extract
Instructions
1-Heat heavy cream in a saucepan over medium heat until small bubbles form around the edges, without letting it boil.
2-Lower the heat and add the sifted cocoa powder, mixing until itβs fully combined.
3-Add the remaining ingredients chocolate, butter, sifted powdered sugar, instant coffee, salt if using, and vanilla stirring gently until all solids melt and the mixture is smooth.
4-Optional: Strain the mixture into a heatproof bowl to remove any lumps, then cover the surface directly with cling wrap to prevent a skin from forming.
5-Let it cool completely, which takes about 45 minutes, before using it on your desserts.
