3/4 cup plus 2 tablespoons unsalted butter

3 3/4 cups powdered/confectioner’s sugar

13 ounces semi-sweet chocolate or a combination of dark and milk chocolate (equivalent to 2 1/4 cups if using chocolate chips)

1 1/2 cups almond meal or hazelnut meal

6 tablespoons quality dark rum

1 teaspoon vanilla extract

Coatings such as chocolate sprinkles, cocoa powder, desiccated coconut, or chopped nuts (used for rolling, quantities vary based on preference)

Instructions

1-First, melt the chocolate using a double boiler or in the microwave to get it nice and smooth.

2-In a saucepan, melt the butter, add the powdered/confectioner’s sugar, and stir to combine; cook the mixture for 1-2 minutes until smooth.

3-Stir the nut meal almond or hazelnut into the melted chocolate while keeping it warm over the double boiler.

4-Add the warm butter and powdered sugar mixture, along with the rum and vanilla extract; stir thoroughly to combine everything into a uniform mix.

5-Scoop the mixture into portions to form balls approximately 3/4 to 1 inch in diameter.

6-While the balls are still warm and moist, roll them in your chosen coating to ensure it adheres properly. Keep the mixture warm during this process by placing the bowl over hot water or reheating briefly.

7-Place the coated balls on a clean surface or baking sheet to cool and set, then store them in an airtight container.
