Three quarters cup unsalted butter, softened
One cup granulated sugar
One large egg
Quarter cup unsulphured molasses
Two and a half cups all-purpose flour
Two teaspoons baking soda
Half teaspoon salt
One teaspoon cinnamon (increase to two teaspoons for stronger flavor)
Half teaspoon dried ground ginger (increase to one or two teaspoons for stronger flavor)

Instructions
1-Preheat oven to 350 degrees Fahrenheit.
2-In a bowl, beat softened butter and granulated sugar until light and fluffy, which takes about 2-3 minutes with an electric mixer.
3-Beat in the egg and molasses until well combined.
4-In a separate bowl, whisk together all-purpose flour, baking soda, salt, cinnamon, and ground ginger.
5-Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6-Form the dough into balls slightly smaller than a golf ball and optionally roll them in granulated sugar.
7-Place the dough balls 2-3 inches apart on a baking sheet.
8-Bake for 10-12 minutes.
9-Remove from oven and let cookies cool on the baking sheet for about 10 minutes before transferring to a wire rack to cool completely.
