1.2 kg (2.5 lb) potatoes Base that absorbs flavors for tender results

1/2 cup olive oil Adds richness and helps with roasting

1/3 cup lemon juice Provides tangy zest and tenderizes potatoes

1 1/2 cups low sodium chicken stock or broth

5 garlic cloves, finely grated

1 tablespoon dried oregano

2 teaspoons salt

Instructions

1-Preheat the oven: Preheat the oven to 200ยฐC (390ยฐF) or 180ยฐC (356ยฐF) for fan-assisted ovens to get the right heat for roasting.

2-Peel the potatoes: Peel the potatoes and cut medium ones into thirds and large ones into quarters or thick wedges about 3 cm thick for even cooking.

3-Place the potatoes and all other ingredients in a roasting pan: then toss well to coat for full flavor absorption.

4-Roast for 20 minutes, turn the potatoes, and continue roasting for an additional 25 to 30 minutes until most of the liquid is absorbed or evaporated, leaving mostly oil in the pan.

5-For a crisper finish, transfer the potatoes to a separate baking tray, drizzle with the remaining juices from the original pan, and roast for another 35 to 40 minutes, turning once or twice, until golden and crispy on the edges.

6-If desired, return the original pan juices to the oven for 5 to 10 minutes to reduce and make the garlic golden, then serve the potatoes garnished with lemon wedges and fresh oregano if you like.
