– 2 tablespoons minced red bell pepper

– 2/3 cup water

– 1/2 cup canned tomato sauce

– 8 six-inch corn tortillas or taco shells (hard or soft as preferred)

– 1/2 cup shredded cheese (such as cheddar or a Mexican cheese blend)

– 1 1/2 cups shredded iceberg lettuce

– 1 cup pico de gallo (made from fresh tomato, onion, cilantro, and lime)

– Diced tomatoes for optional topping

– Sour cream or Greek yogurt for optional topping

– Sliced avocados or guacamole for optional topping

– Green onions for optional topping

Instructions
