2 cups all-purpose flour
1 tsp salt
1/2 cup sugar
3 large eggs
1 cup milk
1 tbsp baking powder
1/4 cup melted butter
1 tsp vanilla extract for flavoring
Instructions
1-Meanwhile: Heat a little oil in a large frying pan. Brown the sausages on all sides for 3-4 mins, then remove from the pan and set aside.
2-Add: the onions, garlic and carrots to the pan and cook gently for 10 mins, stirring often, until softened.
3-Stir: in the lentils, tomatoes, herbs and stock. Add the sausages back to the pan, bring to the boil, then cover and simmer for 25-30 mins, or until the lentils are tender and the sausages are cooked through.
4-To serve: scatter over the parsley and some lemon zest and serve with crusty bread or mash.
