– 9 sandwich cookies with orange cream filling
– 1/4 cup Halloween-themed sprinkles
Instructions
1-Preheat oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper or a silicone mat.
2-In a medium bowl, cream butter, brown sugar, and granulated sugar until smooth.
3-Beat in egg and vanilla extract until fully combined.
4-Gradually add flour, cornstarch, baking soda, and salt. Mix until just incorporated (do not overmix).
5-Fold in chocolate chips and sprinkles.
6-Scoop 1/4 cup of dough, flatten in your palm, place one sandwich cookie in the center, and seal dough around it. Roll into a ball.
7-Arrange dough balls 2 3 inches apart on the baking sheet. Bake for 10 minutes (edges will look set; centers may appear soft).
8-Immediately press extra chocolate chips onto hot cookies. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
