Instructions

1-Preheat your oven: to 350ºF (180ºC).

2-Beat eggs and cheese: Beat 8 eggs with ⅔ cup freshly grated Parmesan cheese in a medium bowl, then set it aside for later. This step ensures the eggs mix evenly and incorporate that cheesy goodness right from the start.

3-Heat oil and cook ham: Heat 2 tablespoons of extra virgin olive oil in an ovenproof, non-stick or cast iron skillet over medium heat. Add 2 cups of diced ham and cook until it’s lightly browned, which brings out that smoky flavor.

4-Cook onions: Toss in the 6 small finely sliced green onions and cook until they soften, adding a fresh crunch to the mix.

5-Season egg mixture: Season the egg mixture with ¼ teaspoon salt and ¼ teaspoon ground black pepper, and if you want a softer texture, stir in ¼ cup milk at this point.

6-Combine and cook on stove: Spread the ham and onions evenly in the skillet, then pour the egg mixture over them. Cook gently for 1 to 2 minutes on the stove, and sprinkle 1 cup of diced or shredded cheddar cheese on top. Give the skillet a shake to settle the cheese evenly, and continue cooking for about 5 minutes, lifting the edges occasionally to prevent burning.

7-Bake frittata: Transfer the skillet to the oven and bake for 5 to 8 minutes until the frittata turns golden brown, with set edges and a slightly jiggly center.

8-Cool and garnish: Let it cool for a few minutes before serving, and garnish with chopped green onions and halved cherry tomatoes if you like.
