1-First, preheat your oven to 180C or 350F, as this sets the stage for that perfect bake. Prepare two pieces of foil on your work surface and give them a quick spray with oil to prevent sticking. Now, place one tortilla on the foil and arrange the ham slices flat in the middle, shaping them into a shallow crater for the goodies to nestle in.
2-Next, add the cheese right in the center of the ham, forming a neat ring that will hold the egg. Crack an egg into that cheese ring as fast as you can to keep things tidy. Then, fold the bottom and top edges of the tortilla inward, followed by the left and right sides, to create a secure parcel that won’t leak.
3-Wrap the parcel in the foil without flipping it over, then place your assembled pockets on a baking tray. Pop them in the oven and bake for 25 minutes until the edges turn crispy and the top stays soft. Once done, check the yolk firmness by gently poking the pocket aim for that just-right jiggle. Unwrap immediately and serve hot for the best flavor.
