๐Ÿ This Harvest Caramel Corn Recipe delivers a perfect balance of sweet and salty with a crunchy caramel coating and festive mix-ins.
๐Ÿซ It’s an easy, crowd-pleasing treat ideal for fall gatherings, holidays, and cozy snacking moments.

  • Total Time: 15 minutes
  • Yield: About 10 cups caramel corn

Ingredients

– 10 cups of popped popcorn for base and texture

– Salt to taste for balancing sweetness and enhancing flavor

– 1 cup sweet cream salted butter for creaminess and richness

– 1 cup light brown sugar for rich sweetness and caramel color

– 2 teaspoons vanilla for depth and aroma

– 1/2 teaspoon baking soda for aerating caramel to make it lighter

– Chocolate caramel candies (use as needed for sprinkling) for extra sweetness and texture

– Colored chocolate candies in brown, yellow, red, and orange (use as needed for sprinkling) for festive colors and sweet bursts

– Pretzel-flavored colored chocolate candies in brown, yellow, red, and orange (use as needed for sprinkling) for a salty-sweet mix

Instructions

1-First, pop 10 cups of popcorn using a stove, air popper, or microwave, and be sure to remove any un-popped kernels for a smooth treat.

2-Once ready, salt the popcorn generously while it’s hot to get that perfect sweet-salty balance.

3-Next, in a saucepan, melt 1 cup of sweet cream salted butter over medium-low heat to start the caramel base.

4-Add 1 cup of light brown sugar to the melted butter and stir until it combines smoothly.

5-Bring this mixture to a low boil while stirring continuously, then let it boil for 4 minutes without stirring to thicken properly.

6-Remove from heat and stir in 2 teaspoons of vanilla for about one minute, then quickly add 1/2 teaspoon of baking soda; watch as it foams and lightens the color for better coating.

7-Slowly pour one-third of the caramel over the salted popcorn and fold it in gently, then add the rest and mix until everything is evenly coated.

8-Spread the coated popcorn on a cookie sheet lined with aluminum foil or a silicone liner to cool.

Notes

๐ŸŽฌ Prepare popcorn fresh on the stove for best flavor; air-popped or microwave without added flavoring also works.
๐Ÿง‚ Salt popcorn generously while hot to balance sweetness and help salt adhere.
๐ŸŽˆ Baking soda aerates caramel, making it lighter and easier to coat popcorn evenly.
