1 teaspoon baking powder

Β½ cup honey or maple syrup

2 eggs, preferably at room temperature

1 cup plain Greek yogurt

2 teaspoons vanilla extract

1 cup (6 ounces) blueberries, fresh or frozen

1 tablespoon raw sugar for sprinkling on top

Instructions

1-First: preheat the oven to 400 degrees Fahrenheit and grease a muffin tin or line it with paper liners to prevent sticking. In a large bowl, whisk together 1 ΒΎ cups of the whole wheat flour, baking powder, baking soda, salt, and cinnamon until well combined.

2-Next: mix the melted coconut oil or olive oil with honey or maple syrup in a medium bowl, then add the eggs and beat them well for a smooth blend.

3: Stir in the Greek yogurt and vanilla extract until everything is thoroughly mixed, creating a creamy base.

4: Pour this wet mixture into the dry ingredients and stir gently until just combined it’s okay if some lumps remain to keep the muffins tender.

5: Toss the blueberries with the remaining 1 teaspoon of flour to coat them lightly, then fold them into the batter carefully to distribute evenly.

6: Divide the batter evenly among 12 muffin cups, filling them about three-quarters full, and sprinkle the tops with raw sugar for a nice crust.

7: Bake for 16 to 19 minutes, or until the muffins turn golden and a toothpick inserted in the center comes out clean.

8: Let them cool in the pan on a rack for a few minutes, then loosen the edges if needed for easy removal.
