Ingredients

– 35 crackers

– 1 cup shredded cheddar cheese

– 4 slices cooked bacon, chopped

– 3 tablespoons melted butter

– 24 oz cream cheese, at room temperature

– 7 jalapenos

– 1/2 cup granulated sugar

– 3 large eggs

– 1/4 cup sour cream

– 1 cup sour cream

– 1 1/2 tablespoons lemon juice

– 1 1/2 tablespoons granulated sugar

– 5 pieces bacon for garnish

Instructions

1-Preheat and Prepare the Crust: First, preheat the oven to 350 degrees. For the crust, pulse the crackers in a food processor until crumbed, then add cheddar cheese, bacon, and melted butter. Pulse until the crumbs are moist and mixed, press into an 8-inch springform pan, and bake for 10 minutes. Let it cool before moving on it’s that easy to build a tasty base.

2-Mix and Bake the Filling: Next, wipe the food processor clean and add cream cheese and jalapenos, pulsing until the jalapenos are finely minced. Add sugar, eggs, and sour cream, then pulse until combined. Pour this filling over the cooled crust and bake at 350 degrees for 1 hour. This step creates the creamy heart of the cheesecake with a spicy surprise.

3-Add the Topping and Finish: Prepare the topping by whisking sour cream, lemon juice, and sugar together. After the filling bakes for 1 hour, spread the topping evenly on the cheesecake and bake for another 15 to 20 minutes. Turn the oven off, crack the door, and let it cool for about 2 hours before refrigerating to chill. Before serving, sprinkle with chopped bacon pieces, slice, and enjoy the spicy cream cheese twist.
